Hump Day Treat: Lobster Mac n Cheese

Today’s hump day treat is Lobster Mac n Cheese. Everyone who knows me very well knows that I love mac n cheese. It is my kryptonite in the sense that if I see it on a menu, I absolutely have to order it 99% of the time. Not until I was older when I started to like things like shellfish did I discover the infamous lobster mac n cheese. Today I am taking a classic recipe from one of my favorite restaurants in Miami Barton G and giving it a little twist. Depending on if you want to make your own lobster these are the ingredients you will need.

 

Ingredients:

½ cup white cheddar cheese

½ cup Vermont yellow cheese

½ cup velveeta cheese

¼ cup of boursin cheese

¼ cup parmesean

¼ heavy cream

½ cup of milk

½ cup of butter or margarine

1 box of macaroni noodles

Lobster – package of pre cooked lobster or 2 fresh lobster tails from the store

One large baking dish ( pyrex)

 

Directions for cooking lobster

If you are going to cook your lobster the general way to do it is as follows. Bring 6 cups of salted water to a boil in a 3-quart saucepan. Once the water is really boiling add the lobster tails into the pot. Cook the lobster tails for about 8 – 12 minutes or until the shells turn bright red and the meat is tender when you poke it with a fork. After they look cooked take a pair of tongs and take them out of the water and onto a cutting board. Let them cool for at least 20 minutes. Once they are cool, you can put a paper towel over them and use the side of the knife to help crack its shell.  Then you will just dice up the lobster into little pieces and put it in a side bowl for later.

 

Directions

  1. Preheat the oven to 350 degrees
  2. cook the macaroni noodles according to the box and have them ready to go in the pasta strainer
  3. in a large bowl mix all of the various cheeses ( I personally don’t use the boursin cheese because I don’t like the taste, but if you like the taste of it then add it ☺)
  4. once all the cheeses are mixed well then add the cooked noodles in while mixing
  5. Add the heavy cream and milk and continue to stir
  6. Coat the large baking dish with the butter and make sure it covers all the edges
  7. Add half of the cooked lobster that you had previously chopped into little pieces and mix it in as well
  8. After thoroughly mixing everything in the bowl pour it into the buttered baking dish
  9. Garnish the top of the noodles with additional cheese and lobster to make sure that no piece is left untouched
  10. Bake for 45 minutes or until golden brown

Hump Day Treat! The Slutty Brownie

For this week’s Hump Day Treat, I decided to share with you all one of my favorite new dessert recipes! Now we many of us have seen this recipe on Pinterest and all over Instagram, the so called “slutty brownie,” but here is my version of the slutty brownie.

 

Ingredients:

1 box of Ghiradelii brownie mix

1 package of Pillsbury cookie dough

1 package of regular Oreos

1 Pyrex 11×7 baking pan

Pam non stick baking spray

 

 

  • Preheat the the oven to 350 degrees.
  • Spray the pyrex pan with the pam baking spray
  • Layer the bottom part of the pyrex with the cookie dough. Flatten the cookie dough so it covers the whole bottom of the pan
  • After the cookie dough is all flat at the bottom of the pan you will now need to make the brownie mix. When I get this brownie mix I normally get it at Costco so I double up the packages to make it extra thick, but you don’t have to do that for this recipe. If you want to it still tastes just as yummy!
  • Now open the oreos up and put them into rows on top of the cookie dough. In the past I have done four oreos across and then just done as many as I could fit in the pan.
  • After the oreos are all lined up it is time to pour the brownie mix on top of the the oreos that is on top of the cookie dough. Make sure when you are pouring you go over the entire pan so that it is evenly distributed.

 

    1. Some people like to add sprinkles on top of the brownie mix once it has settled , which you can do as well, but I personally like to add toppings after it is cooked.

 

  • Bake in the oven for about 35 minutes then check with a toothpick if it is cooked through. I like cooking with a pyrex for this reason so you can see from the side if the cookies are made all the way through.
  • Take out of the oven once baked and let it cool in the pyrex on a cooling rack. Once cooled, cut and enjoy!!!

Hump Day Treat: French Onion Soup Dumplings

IMG_6788When I first moved to the city I learned about tapas style restaurants. If you are unfamiliar with tapas, this is where you get a bunch of small portions, almost like tastings, and that is your meal! A favorite restaurant of mine is Stanton Social on the Lower East Side. I am a HUGE French onion soup lover and when I saw French onion soup dumplings on the menu I just had to try it. I loved it so much that I wanted to learn how to make it. Here is the recipe and a few tips that will help you make it successfully for your future party guests.

You will need a gratin dish. They used to sell gratin dishes at Bed Bath and Beyond that looked like they were for deviled eggs so the soup dumplings had their own little hole, but if you just get a small gratin dish that works as well. Be sure to spray it with cooking spray and put it on a cooking sheet lined with aluminum foil before putting it into the oven. I also purchased a cooking brush that will help with this recipe as well. This recipe says you can make it with counterfeit French onion soup, but I think it tastes better when you make it from scratch. Here is the recipe:

Counterfeit French Onion Soup Onions

  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 2 red onions, thinly sliced
  • 1 sweet yellow onion, thinly sliced
  • 1/2 tablespoon sugar
  • Salt and pepper
  • 1/4 cup cognac
  • 1/2 cup dry white wine
  • 1 cup beef stock
  • 1 bay leaf
  • The leaves of 4 sprigs thyme

Counterfeit French Onion soup Recipe

  • Heat the butter and oil in a sauté pan on medium-low heat. Add the onions, sugar, salt, and pepper, and cook for 30 minutes, stirring occasionally. Turn down the heat so that the onions don’t burn. You want the onions to be soft and not hard.
    • After 30 minutes, add the cognac, and reduce for 1 minute. Add the wine and beef stock,bay leaf and thyme. Season again with salt and pepper. Simmer on low for another 30 minutes.

In the recipe it states to drain the onions, but I chose not to and to just lower the heat on the stove to the lowest temperature.

Making the Soup Dumplings

  • Turn your oven to the broiler setting  (this should only take a few minutes to heat up)
  • Take a wonton wrapper in your hand, and use the cooking brush and dip it in the broth in the pan and brush the inside of the wonton wrapper with it. Instead of using your fingers and getting them all soupy this allows you to get the wrapper covered in the soup without making a mess. Line the wonton wrapper with the soup so that way it closes on the sides after you fill it.
  • Take about a teaspoon of the drained onions, and place it into the center of the wonton wrapper. Then take the opposite corners and fold it into a point and then take the other to corners and fold it into the middle and the twist all 4 corner together in the middle. This recipe suggests you flip the dumpling upside down in the pan. I did not do that and it still turned out just as delicious. Keep making dumplings until you have packed both gratin dishes.
  • Top each gratin dish some Gruyère and some of the Parmesan.  I do not go by a specific amount I just put it on until it covers the top of the dumplings. Dot little dabs of butter all over the top of the cheese. This will allow the cheese to brown and toast like on real French Onion Soup.
  • Sit the dumplings under the broiler for about 5 minutes. Depending on your personal preference it could be more.
  • Take them out of the oven and stick some toothpicks into the soup dumplings.

Let them sit for two minutes otherwise when you bite into them you will burn yourself. Trust me I know from experience!

Hump Day Treat: Oreo Truffles

Chef Jodi here ready to give you guys one of my favorite recipes of all time. I will admit that when I went to college I wasn’t the best cook. I could cook the basic things like grilled chicken, pasta, mac and cheese, you know the easy stuff, but I had never cooked anything more major than that. I am going to post different recipes that I found were easy to make, but also very tasty. I personally have the biggest sweet tooth of anyone I know and this Oreo truffle recipe is really simple and a delicious dessert for anyone to make.

 

30-minute prep time

1 hour 40 minutes total

Makes 48 servings

 

Here are the ingredients you will need:

1 package of Oreo cookies (regular flavored no double stuffed ones = 36 cookies)

1 package of Philadelphia cream cheese (softened)

2 (8 ounce packages of baker’s semi sweet baking chocolate melted)

1 cookie sheet with parchment paper on it

 

Personally, I don’t use the Baker’s brand of semi sweet chocolate, so really any melted semi sweet chocolate will work!

 

First take 9 cookies and crush them in a food processor, as you will need these for later.

 

Now take the rest of the Oreo cookies and crush them in the food processor. Mix the softened cream cheese and the cookie crumbs until well blended.

 

Shape into 48 (1 inch balls). Freeze them for 10 minutes. After taking them out of the freezer, have the cookie sheet next to the bowl of melted chocolate so you can transfer the Oreo balls straight to there without a mess. Dip the balls in the melted chocolate so they are coated with a single layer then put them on the cookie sheet. Once all the balls have been covered in chocolate, sprinkle a little bit of Oreo crumbs on top. Refrigerate for an hour until they are firm. After that take them out and enjoy!!
