Hump Day Treat – The French Apple Tart

December 21, 2016

Happy Wednesday! Today is my Mom’s birthday and in honor of that I wanted to share with you one of her recipes that she recently made this past Thanksgiving. Now my Mom and I both love sweets, but when it comes to the holidays my Mom is the master at dessert. I have always loved apple pie, but no one other myself would eat it. So this past Thanksgiving my Mom made a thin french apple tart and when I tell you that it looked like a work of art I am not joking. It was so thin and delicious that it didn’t even feel like you were eating anything. I honestly now prefer this than an apple pie. It was that good! Here is the recipe for this amazing dish.

Ingredients:

½ (15 ounce ) package refrigerated pie dough ( pillsbury has these)

¼ cup sugar

½ teaspoon ground cinnamon

2 pounds Golden Delicious apples, peeled, cored and thinly sliced (Try to make them as thin as possible)

2 ½ tablespoons honey

½ teaspoon vanilla extract

Directions:

1.Preheat oven to 425 degrees fahrenheit

2.Place dough on a lightly floured surface

3.Roll into a 12 inch circle and place on a 12 – inch pizza pan

4.Combine sugar and cinnamon and sprinkle 1 tablespoon of the sugar mixture over the dough

5.Arrange apple slices spokelike on top of the dough. Do this by working from outside edge of the dough to the center

6.Sprinkle app over the remaining apple slices that are now on the dough the remaining sugar mixture

7.Place in the oven for 30 minutes

8.Right before  you are about to take the apple tart out of the oven combine the honey and vanilla in a microwave safe bowl

9.Microwave on high for 40 seconds

10.Take the tart out of the oven. While the tart is still warm brush honey mixture over it.

11.Serve this dessert warm and if you like with a scoop of vanilla ice cream. ENJOY!

Hope you all enjoy my mom’s recipe on her birthday <3 Love you mom!

Fitness Tuesday- Foam Roller

December 20, 2016

Happy Tuesday everyone! With the holidays fast approaching I know that everyone is doing their last minute work outs in order to look great for when they see their families. One of the things that always happens after a great workout is you muscles tend to be sore. For me I always am sore some days I am more sore than others depending on the work out I had the day before, but this is something that isn’t bad. I tend to get a lot of muscles spasms especially on my back. I grew up with scoliosis and instead of surgery I wore a back brace from 7th grade until my sophomore year of high school. This was pretty difficult especially growing up in Florida with all of this humidity. Since I have been working out more frequently than before I have noticed my back acting up from it. My brother Ira suggested that I use a foam roller to stretch out my muscles. I looked at it and said that thing you have in your bedroom is for that? He said yes and showed me how to use it properly so that I wouldn’t hurt myself in the process. Since that day I use after every hard workout I have which is normally after I go to a Fhitting Room class or a SoulSurvivor. This is has truly made a difference with my muscles and helped with my back spasms tremendously! If you don’t own a foam roller no problem there are tons of options online now and at different price points. If you have never used a foam roller before and aren’t sure which one to purchase stick with the simple ones that almost look like a rolled up yoga mat to start and then go from there. Hope this helps all of you with your muscles. Have a great Tuesday!

Hump Day Treat – Father Christmas Hats

December 14, 2016

Happy Wednesday! It’s time for another hump day treat recipe here on Just Jodi Style and today’s theme is Christmas. I personally don’t celebrate the holiday, but I do love all of the delicious treats that come along with it. This recipe I found from Tastemade and they look absolutely adorable! Check out the recipe here below.

Ingredients:

  • 24 strawberries
  • For the cake
  • 200g unsalted butter, softened
  • 25g vegetable oil
  • 260g caster sugar
  • 2 eggs
  • 300g plain flour
  • 1 ½ baking powder
  • 2 tbsp cocoa powder
  • ⅓ cup whole milk
  • For the frosting
  • 125g unsalted butter
  • 200g icing sugar
  • 100g cream cheese

Directions:

  1. Preheat the oven to 356 degrees .
  2. Cream together the butter, oil and sugar until pale.
  3. Add in the eggs one at a time, mixing well between each one. Turn the whisk right down, if using an electric one, and add in the milk.
  4. Sift in the dry ingredients and fold through the mix.
  5. Grease the mini cupcake tray, and place a teaspoon amount of the mix into each of the cake holes.
  6. Place in the hot oven for around 12 minutes until fluffy and cooked through. The way to check if they are cooked all the way through is to poke the cupcakes with a toothpick. If the toothpick comes out clean then it is cooked!
  7. While the cupcakes are baking, make the frosting.
  8. Whisk the butter with an electric whisk until very pale. Then on a low speed, whisk in the icing sugar and once combined, whisk in the cream cheese till just mixed. Place in a piping bag with a round hole nozzle attached or simple cut off the end of the piping bag.
  9. Once the cakes are out and cooled, pipe a spiral shape on the top of the cakes. Start from the outside and slowly work your way into the centre.
  10. Trim the top of the strawberry and place on top. Finish with a blob of frosting on the top.

And there you go! Hope you all enjoy and have a great Wednesday <3

Fitness Tuesday – Stress Unloading Apps

December 13, 2016

Happy Fitness Tuesday! With the holiday season upon us we all know that this is the most stressful time of the year. Whether it be you are stressed at work and trying to get all your projects done before the end of the year or stressed out in your personal life we all have our moments. According to Self Magazine there are a few apps out there that are supposed to relieve you from some of your daily stresses. I tested some of them out myself and here is what I found. The first app is called “OMG I Can Meditate!” and its free on IOS or Android. Essentially you are moving your finger across the screen with a black blob and when you lose focus then it alerts you that you have lost focus. For me this was relaxing for a little while until my thumb started to hurt, but some doctors would say that the pain in my thumb  is from all the typing and texting that I do. If you are one of those workaholics you need to try the “Totally Tabata” app that is free as well for IOS or Androids. This helps you sneak in a quick workout while you are in at work and it’s interval training which is also good for your body because you don’t want to A put too much stress on it when you don’t work out often and B it is good to do something different in each work out. The final suggestion that I believe works wonders is mindless gaming. I know that sometimes people who do this can get heavily addicted and forget where they are, but if you have maybe one to two games on your phone and you set a stopwatch to play for say an hour a day it really helps you just clear your mind of everything else around you and destress. I never understood this before until recently and now even on the days that I am not working I do it to just clear my head. I also tried it with putting my phone on airplane mode, but some of the games require internet access so if it does put your phone on sleep mode so you can fully engross in the game that you are playing. My personal favorite game is 1010 it is truly addicting. If you are interested in seeing what other options that Self Magazine suggests to destress this holiday season check out their website here. Hope everyone has a great Tuesday! <3

Hump Day Treat – Dog Cakes

December 7, 2016

img_7079

img_7059-3

Happy Wednesday Everyone! So if you saw yesterday’s post you know that it was my sweet puppy Stella’s 1st birthday! Now I didn’t have the chance to throw her a birthday party ( Yes that is a thing dog birthday parties don’t laugh) and I wanted to make her birthday extra special. I had previously taken Stella to her first birthday party for her puppy friend Oliver and his mom had got him a cake made from a bakery in the city. Now I didn’t think of getting a cake made until this past weekend and I knew it would be too late to order one so I thought why not make one myself? How hard could it really be? I searched different stores to get a cake pan in the shape of a dog bone first, but since it was just for Stella I opted out to make 3 small pie ones instead of one large one. Thanks to food.com for the recipe Stella really did enjoy it and still this morning is looking to see if she left any crumbs on the ground 🙂

Ingredients:

1 egg

¼ cup peanut butter ( I used skippy natural creamy)

¼ cup cooking oil ( I personally used vegetable oil)

1 teaspoon vanilla extract

⅓ cup of honey (optional but I personally used it)

1 cup carrot, shredded

1 cup whole wheat flour ( if you don’t have whole wheat flour then use white flour but it’s better with whole wheat flour)

1 teaspoon baking soda

Directions:

1.Preheat oven to 350 degrees

2.Grease your baking pans that you chose to use. For me I chose 3 small disposable pie tins.

3.Combine the egg, peanut butter, oil, vanilla and honey (if you use honey) in a large bowl. Blend well

4.Stir in the carrots and mix thoroughly

5.Now add in the flour and baking soda and mix it all together fully

6.Spoon the batter into prepared pans. To make the batter flat in the pan just lift it up and lightly tap it to the counter surface. I personally do this when I get froyo in order to add more into my cup!

7.If you want add on top a milkbone, but don’t push it into the cake just place it nicely on top of the batter

img_7055

8.Bake in oven for 40 minutes

9.Take out cakes and let them cool in pan for 10 minutes then if you have put on a wire rack to cool completely or onto a different plate.

Hope all of your furry friends enjoy this cake! Stella for sure did <3

Fitness Tuesday in honor of Stella’s Birthday!!

December 6, 2016

fullsizerender

160228-asharris-jodi_style-5110-look4

Happy Fitness Tuesday! Today is a very special day for me because it my sweet puppy Stella’s first birthday!! It is crazy to me to think that a year ago on my birthday I put down a deposit for her and now she is already a year old. So today in honor of her birthday I want to talk about fitness with your animal. Now I love to give Stella treats and of course she loves them too, but we also want our pets to be healthy and have tons of energy. I have noticed that for her even after a two hour walk she still is full of energy, but then eventually sleeps. I personally do not go running with Stella everyday, but I have been taking her for casual jogs in Central Park at least once a week since. Thankfully (knock on wood) it hasn’t snowed yet so I am taking full advantage of it. If you are fortunate enough to have a pool anywhere near you and for us New Yorkers an indoor pool take your dog for an occasional swim. All of my family pets have all loved to swim not just because we were in Miami, but because it is great exercise for them. Even though I have seen videos of it and I find it entertaining I have heard that putting a dog on a treadmill isn’t the best idea especially if you turn up the speed on it. Just like Taylor Swift did in the Apple commercial a dog can seriously hurt themselves and fall down. Hope you all have a great Tuesday and again Happy Birthday to my sweet puppy Stella! If you don’t follow her already please follow her on instagram: @ HowStellaGotHerWoofBack

Hump Day Treat! Rainbow Pop Tart

November 30, 2016

rainbowpoptarts4

rainbowpoptarts7

Happy Wednesday! Hope everyone is having a great week and are finally getting over our food coma’s from last week’s Thanksgiving meal. Now one of my favorite treats as a kid was a strawberry pop tart. I was the kid that didn’t toast it in the toaster oven I ate it straight from the bag and I loved it. I recently have seen a bunch of amazing pictures on instagram of bakeries making their own homemade versions of pop tarts. Needless to say they all looked amazing and I wanted to learn how to make one for myself. Thanks to Tastemade they recently posted a rainbow pop tart recipe and it looks unreal!

Ingredients:

Pop Tart Dough:

-2 ½ cups all-purpose flour

-1 tsp salt

-1 tsp sugar

-1 cup cold unsalted butter, cut into cubes

-¼ – ½ cup cold water

-pink, orange, yellow, green, blue and purple food coloring

Filling:

-any jam of your choice (I personally love strawberry)

Glaze:

-3 tbsp whipping cream

-½ tsp vanilla extract

-½ cup confectioner’s sugar

-rainbow sprinkles

Directions:

  1. First make the dough. Mix together the flour, salt and sugar in a food processor. Add butter and pulse until it turns into a crumbly meal-like texture. Drizzle over the ice water, and pulse until the dough sticks together when squished together.
  2. Divide the dough into 6 balls and dye each ball a color of the rainbow with food coloring. Flatten each ball of dough into a disk and stack them up in the order of the rainbow. Twist together, then divide in half, wrap in plastic wrap and refrigerate for 1 hour.
  3. Roll the dough out into a rectangle 10in x 8in.
  4. Cut into 4 rectangles and transfer to a baking sheet lined with parchment paper.
  5. Dollop 1 tsp of jam onto the center of one side of each rectangle. Fold the rectangle over to cover the jam and seal closed with a fork.
  6. Bake at 400F for 20 minutes, then transfer to a wire rack and fully cool.
  7. Now the frosting. Combine the whipping cream and vanilla extract in a bowl. Add the confectioner’s sugar and whisk until fully combined.
  8. Spoon some glaze onto each pop tart and decorate with rainbow sprinkles.

Hope you all enjoy this Hump Day Treat!

Fitness Tuesday- Bagels & Squats

November 29, 2016

nkf_fhitting-room-5

Happy Tuesday Everyone! Can not believe that November is almost over and it’s now officially Holiday Season! As I have previously posted one of my favorite new workouts that I go to at least once a week is Fhitting Room. I love that every time I go it is something different. Even if you do the same exercise again like the rowing machine they always find a way to change it up. Now since Fhitting room is currently only in New York I found a video posted by Bagels & Squats that shows 12 different ways to work out your arms without the use of any weights! As I was watching the video I said to my mom sitting next to me that these were all workouts I did in my Fhitting Room classes. Then low and behold at the end of the video it says that the exercises were provided by Emily Cook Harris an instructor at The Fhitting Room. The video was posted by Self Magazine as well. If you go to Bagels & Squats facebook page here the video was posted on June 6th of this year. Hope everyone has a great day and did a lot of good shopping yesterday on Cyber Monday. Some of the sites are even continuing their sales today so if you didn’t snag an item that you forgot yesterday check and see if they are still offering Cyber Monday sales on the site. <3

Fitness Tuesday – Pre Thanksgiving Work Out

November 22, 2016

img_4079

Happy Fitness Tuesday everyone! I am running around crazy right now because I am heading back to Florida today with my sweet puppy Stella and I’m super excited to get to some warm weather ASAP! So as many of you are already preparing yourselves for eating way too much food on Thursday there are some workouts that can help you prepare for the feast I am sure all of you are about to have. One of the things that I do on every flight I have is stretch. Whether it be twisting my back or if you are sitting in the bulkhead sit I always stretch my legs out. I am also one of those people that stretches my quads while I am waiting for the restroom. The worst thing you can do especially on a plane is just not move at all. Prior to your meal this week I suggest that if you are somewhere that is warm take a nice walk. I am most definitely taking Stella on a nice walk around my neighborhood because first off it’s warm outside and if you can get a nice tan while you are walking why not and also its an easy way to burn some calories before you consume them all at your Thanksgiving meal. Also a lot of cities have Turkey Trots which is usually a 5k the day of Turkey day. Now if you are like me and don’t want to leave your mom or dad home cooking by themselves then the walk around the block is a great way to get some work out in before your meal. I hope everyone who is traveling today travels safe and stays warm if you are staying in the cold. Hopefully I come back from Miami with a nice tan 🙂 <3
