Hump Day Treat: Salmon Patties

It’s Wednesday and you all know what that means it’s time for a hump day treat recipe. One of my favorite childhood memories of my Grandparent’s is how my Grandma would always make us lunch whenever my brother and I went over to my Grandparent’s apartment. Now since my grandparents kept kosher inside their home there was certain things that we weren’t allowed to eat while we were there because of it. She figured out quickly something that was easy to make for her and something that all the grandchildren would eat. Mac n Cheese with Salmon Patties! They were really salmon burgers but she liked calling them patties for us. So now she would make us the standard kraft macaroni and cheese from the box which we all know is a classic. Today I personally love to make the Cracker Barrel white cheddar mac n cheese. If you haven’t tried it already you need to do it right away! Now for the salmon burgers here is what you will need if you are cooking for yourself:

Ingredients:

1 can of pink boneless skinless salmon

Bread crumbs (I use the Italian ones)

2 eggs

Vegetable oil

Plastic gloves

Directions:

1.Put on the plastic gloves. Open the can of salmon and drain out the liquid. In a mixing bowl place the salmon that you have removed and drained from the can. Using your hands that have gloves on them mix it so it’s in small pieces.

2.Crack two eggs over the salmon. Now mix it all together with your hands so that the egg is all mixed in with the salmon.

3.After you have mixed the egg in pour a little bit of Italian bread crumbs in the bowl. My brother Ira always says more bread crumbs, but you don’t want it to be too much so that the patties are now dry. I always say add a ¼ of a cup at a time. When the salmon has a good consistency where it’s still a little sticky enough to make burgers then you have added enough.

4.In a frying pan heat up the vegetable oil. Once it is heated up place the salmon burgers in the pan. Once you see that the patties are getting brown on one side flip them over so the other side gets golden. Do that about 4 times so each side cooks 3 times on each side.

Fitness Tuesday – Stairs or Stairmaster?

Happy Fitness Tuesday everyone! Since I started working out years ago especially these past 7 ½ months when I have been working out more than I ever have in my life one of the machines I rarely used in the gym was the stairmaster. My mom always told me she was taking the stairs at her office building just like Cary Grant :-). If you don’t know who that is please google him right now! Anyways so I thought I’d do my own experiment deciding between the actual stairs vs the stairmaster. I did the stairmaster twice a week for 2 weeks for about 20 minutes or and then after that I took one week off then for 2 weeks I used the actual stairs twice a week for about 20 minutes as well. While on the stairmaster it was helpful that there was a tv in front of me, but I noticed that I was actually climbing more flights of stairs then I realized. On a stairmaster the stairs are all pretty average height and distance from each other vs say my buildings stairs where they are a bit larger than normal. When I took the stairs in my building (Don’t worry I didn’t too many) I felt more out of breathe and just overall more exhausted after doing them. I also didn’t do as many as I did when I was in the gym, but I did notice a change in my legs and other places more so after I was using the actual stairs vs when I was using the stairmaster. I also noticed that I was more concerned about my form while using the actual stairs vs when I was on the stairmaster. After doing all of this I decided that I prefer doing the actual stairs even if I wasn’t doing as my flights of stairs in my actual stairwell to my building I just feel like I am getting a better work out by doing that vs the stairmaster. Hump Day Treat – The Perfect Lunch

Happy Wednesday! Now for a great hump day treat I am going to share with you all what I normally eat during the week for lunch. Now if you ask any of my family members as a child I hated vegetables. You couldn’t pay me to eat one even if I got just plain pasta at a restaurant and they put any green on it as a garnish I wouldn’t eat it. Yes I was one of those kids when it came to certain things. However, I now eat vegetables every single day. I try to have for lunch everyday a protein and a veggie. Now for some of you who don’t necessarily like veggies there are so many ways to eat them that you didn’t think of before. Like if you don’t like steaming your vegetables another great way to eat them is by cooking them in the oven. Another way to eat veggies that is a huge craze is by spiraling them. I saw a 4 year old eating a plate full of zucchini pasta out at a restaurant and he had no idea because it was spiraled and he thought it looked fun to eat. So today for lunch I made it simple. I took a little bit of olive oil and coconut oil and drizzled it over some broccoli and cut zucchini in a baking pan that I normally use for brownies. I lined it with aluminum foil to help make it less messy. I know that coconut oil is better for you, but I with certain things I still don’t fully like the taste of it if there isn’t any olive oil in it so I am slowly transition all my veggies being cooked with coconut oil. I set the oven to 400 degrees and every 5 – 8 minutes I stir them around so they don’t stick to the pan and also so they brown on both sides. While the veggies are cooking I heat up a small fry pan with some coconut oil and I grill some onions. Now I am like my father where I like my onions cooked well done to the point where they are almost black in color.  Once the veggies are close to being done in the oven and the onions are almost done cooking I add a ¼ tsp of chopped garlic into the pan and then cut up raw chicken. I found that the coconut oil and the onions with the garlic gives the chicken enough flavor. The vegetables in the oven shouldn’t take more than 20 – 25 minutes tops. You should always have some sort of protein and vegetable in the middle of your day especially at work because it will help boost your energy. Hope everyone is having a great day! <3

Fitness Tuesday – The Perfect Sock

Happy Fitness Tuesday everyone! Now I love my KB socks from Costco more than the next person, but when it came to working out I realized that I needed to get a more supportive sock. I tried at first to double up my KB socks because I am going to be honest I didn’t want to have to buy all new socks. However, when I ran the Brooklyn Half Marathon back in the spring of 2014 I was told by multiple people who ran a lot and also worked out way more than I have ever still to this day recommended that I get something different. Now some socks I have learned even though they say prevent blisters doesn’t mean you still won’t get one. If you get a sock and you hate it don’t write off the company automatically. For example I am obsessed with are the Fitsok CF2 cushion low cut sock and I swear to you it is honestly the greatest pair of socks I have ever owned. Now I have tried other types of socks from the same company and I wasn’t that thrilled with them when it came to working out. This style of Fitsoks are not too thick that your shoes then stretch out, but aren’t too thin that you get blisters every time you work out and wear them. I bought my first pair of these back when I ran the Brooklyn Half Marathon and personally now my entire sock drawer is only them. They are also great for during the winter when you are walking around in those winter booties and want a thicker sock and also want to prevent potential blisters. These are truly my go to all year round socks for any activity.  I will say that I still do have some of my KB socks left that I just wear around my apartment from time to time, but only for when I am at home. Hump Day Treat! One tray meals

Happy Wednesday everyone! Hope everyone is having a great hump day and enjoying their week so far. Today I want to talk about cooking in general. Now the other night when I made my friend cauliflower pizza for dinner if you ask my friend Rachael, who so graciously let me use her kitchen that night, I used every dish / pot / pan possible that she had. I am one of those people that I hate eating a meal after cooking without cleaning up after myself beforehand. So I have discovered ways to make it easier for myself and for my sanity while cooking and cleaning. Yesterday for lunch I wanted some roasted broccoli, but I also wanted some salmon. So instead of cooking the salmon on the stove I put it in aluminum foil almost like a pouch. I then place it on a cookie sheet that was lined with aluminum foil and sprayed it and laid my veggies on the side of it. It also makes it an easy clean up if you are using sauces with your meat / fish that you are cooking. For example I used a sesame ginger glaze for my salmon and cooking it this way i can just pick up the “salmon pouch” that i made using aluminum foil and place it direct onto my plate. At the end of the day I used max 3 things for this meal including a cutting board, a cookie sheet with aluminum foil and then the plate I used to eat my meal. There are so many things you can cook together on a cookie sheet in the oven that you may realize now. Fitness Tuesday: Vitamins

Happy Fitness Tuesday! Now anyone that knows me knows that my Mom is a licensed nurse, but doesn’t practice anymore. My brother and I have been known to call her the pez dispenser of vitamin C. She always has some on her and she takes it every single day multiple times a day. Something that people don’t realize is certain vitamins you can take as much as you want of with no true effect on you. For example Vitamin C you can take ideally as much as you want and whatever your body doesn’t utilize you will just go to the bathroom. I personally take 2 to 3,000 MG of vitamin C everyday. On top of this I also take a Vitamin D3 pill. I started taking this pill after I moved to New York. Growing up in Florida and then going to school in Arizona where I was always tan 365 days out of the year I didn’t need it. Depending on the time of the year determines how much I take of my Vitamin D pill, but we are all a little deficient in Vitamin D so it doesn’t hurt to take one small pill of it daily. On top of all of that I take a Magnesium pill everyday. This is highly suggested for all of you who work out frequently. This helps with your muscles and just in general. After I took this one cross training class for the first time I was so sore for about a week it hurt to even sit down on a chair. My Mom and brother then said to go and get some Magnesium pills and it will help with my muscles. Sure enough it helped overnight. Now everyone is different and some people don’t like taking vitamins, but as I have gotten older I have learned that whether I liked it or not I had to take them. I know that it is important to take care of your body and the sooner your start the better. I purchase a lot of my vitamins from Amazon and the brands that I like are Nature Made and Nature’s Bounty. You can also get a lot of these vitamins in bulk at Costco! Hope everyone has a great day <3

Hump Day Treat! Recovery Protein Bowl

Happy Wednesday everyone! With it being the first week of 2017 I thought that I would give you all a healthy recipe for those of you that their new year’s resolution was to eat healthier. My friend Brooke who I worked with when I interned at Glamour Magazine is honestly one of my fitness inspirations. She is currently training and going to be running the marathon in London after running the marathon in NYC this year. Yesterday she posted this amazing protein bowl and I had to ask her how to make it. These are a great alternative to those who don’t necessary like having a smoothie or are still looking for a healthy alternative this new year.

Ingredients:

Almond Milk – plain almond milk, but if you want to try vanilla almond milk I did and it tasted great!

Ice

One Large Frozen Banana (peel it before freezing it! I learned that mistake the hard way)

Plant Protein – My friend got hers from Garden of Life

Almond Butter

 

I did this myself today in a blender and I started with a ¼ of a cup of almond milk and added more as I saw fit and I did the same with the almond butter and plant protein. I personally love protein shakes, but only when they taste more fruity than protein. If you have a nutribullet you can also  make this in there as well. It may be easier if you want to use the container to bring it to work with you on the go. Brooke topped hers off with flaxseed, walnuts and organic shredded coconut. YUM! I personally put on top of mine some of the organic coconut and strawberries.  Hope everyone is having a great day and for those of you in New York City I hope you are all preparing for the snow that we are suppose to get on Friday! <3

Fitness Tuesday – To Stretch Or Not To Stretch?

Happy New Year everyone and happy first fitness Tuesday of 2017!! I am finally recovering from this weekend and getting back into the swing of things. I started January 1st with a 90 minute SoulCycle class and when you hear people say it is hard that is an understatement even for me who does spinning at least 4 times a week. When I used to do spinning I would always leave before the stretch part because I would just want to get out of the class and shower. Even when I was younger I would always just do the bare minimum of stretching not until I played JV basketball in High School did I start to take it more seriously. I didn’t want to injure myself because I wasn’t stretching properly, but with spinning didn’t think that I needed to stretch more than I normally did. One thing that I have learned since starting to work out more is that stretching is more important than you think. Even if you don’t really stretch fully before any type of workout after you should always stretch every muscle you have. There are times I would think oh I don’t need to stretch out my arms because I barely did any arm work, but that doesn’t mean you didn’t use your arms in a way you didn’t realize. As I have previously stated a foam roller is great for stretching, but you can use anything in your house. I personally use a towel to stretch out my legs by using wrapping it around my feet and holding either end of the towel and then pointing and flexing my toes in the process. It may sound silly, but think about all the stretches you did in your middle school PE classes and do those today. They are more helpful than you think and they will prevent you from getting stiff muscles and possibly hurting yourself in the long run. Hump Day Treat – New Years Appetizers

Happy Wednesday! With New Years Eve fast approaching I know that everyone who is throwing parties or having people over before a night on the town are trying to get all the last minute goodies together. One of my favorite appetizers to make is a baked brie. I have featured the recipe here on Just Jodi Style, however it is a bit of a messy clean up especially when you may be leaving to go out right after. One of the best things that I have found to use for any kind of appetizer are pre made filo cups that you can find in any freezer section at your local grocery store. I personally keep one package always on hand in my freezer just in case. Now there are so many things you can do with these filo cups. You can fill them with brie and jelly, spinach, cheddar cheese with bacon or even chocolate! There are so many options that you can do it just all depends what you want to have for your party. I have used this when I don’t want to make the whole baked brie and it is the easiest clean up. My only warning is you don’t realize how hot it is when you bite into it so don’t serve them straight from the oven. Give them at least 5 minutes to cool before serving. Otherwise based upon personal experience you will burn the roof of your mouth. OUCH! If you are making it in the oven I suggest putting it in the oven at 375 degrees for about 20 minutes with any dish. Hope everyone is having a great Wednesday! <3

Fitness Tuesday: Fitness Resolutions

Happy Fitness Tuesday everyone! It is the final Tuesday of 2016 and it’s time to finish this year out strong. Now I know everyone makes and breaks their new year’s resolutions, but this year I am also making a fitness resolution. Over the past 6 ½ months I have committed myself to working out more and having a healthier diet. I have noticed a transformation not only in my body, but in how I feel in my everyday life. Khloe Kardashian had it right when she said her new body isn’t a revenge body. She said it was a reset body in order to reset her body to a better place than it was before. Numbers on a scale don’t mean anything as we have also seen in so many articles you can be the same weight, but your body can look totally different. All that matters is how you feel about yourself and how you feel while wearing your clothes. In 2017 my fitness resolution is to continue to hit the gym as I have been at like 5 – 6 days a week. If I need to have more of a rest and only do 4 days one week that is okay too! You should rest and allow your body to recover after intense work outs. Part of my fitness resolution I want to continue to cook at least 2 out of my 3 meals a day at home. I know that I eat better when I cook at home because I know what is going into my food and I can better portion out my meals. If you are trying to start 2017 with being better about your fitness my biggest suggestion for all of you is to start out slow. I used to work out 6 days a week my final semester in college and I lost that once I started graduate school. This past summer when I wanted to get back into better shape and needed something to do during the day I took it slow. I started with 3 classes a week at different places and found what worked best for me not only for my body, but for my schedule. I know in 2017 I will switch up my workouts a bit because you don’t want to continue to do the same thing every week because then you won’t see the results you are seeking. Remember it doesn’t matter what everyone in the class is doing or what others at the gym are doing it matters what works for you and your body.
